Cheesy But I Like It!
Those who know me best know I am always on the lookout for a great quality
cheese. Cheeses are one of my weaknesses.
We have a separate line item budgeted in our monthly expenses just for
cheese. This is because it is at the top of my Food Pyramid. Go to

not necessarily healthy, it does represent that which pleases my palate and
tummy!
If cheese is being sampled, I will try it at least twice (or more if no one is
looking and I like it). Today most quality cheeses cost $6 to $15 per pound.
There are many different types, styles and manufacturers from which to
choose. With prices as high as they are, when I find one that is relatively
inexpensive and tastes great, I will share it with my friends.
To that end, I would like to introduce you to Trader Joe’s English Coastal
Cheddar. It is an aged (15 months minimum) white cheddar. One reason I
like it because it is NOT dyed orange and does not glow in the dark. It is a
firm cheddar with wonderful crunchy salt precipitates. It is bold, without being
overly tart. It would go well in a Mornay sauce, as well as by itself with some
dry white wine. At $7.49 per pound, this is a great value.
This is one of the cheeses that will be paired with wine and used in one of the
upcoming Culinary Boot Camp classes. Our classes in the current series are
